Prajitura Zebra cu branza (also in English)

Nu prea ma omor dupa prajiturile cu branza, in afara de cheesecake, deci postarea de azi va fi una dintre putinele cu branza de vaci… dar merita, si vizual si gustativ🙂

Ingrediente aluat blat:

125 g  unt

250 g faina alba

50 g  zahar pudra

1 ou

putin lapte

Ingrediente crema de branza:

125 g unt

5 oua

250 g zahar

750 g brinza de vaci/ Quark/ ricotta/ urda (cu cat mai cremoasa, cu atat mai gustoasa prajitura)

1 pachetel de budinca de vanilie (sau daca preferati, 3 linguri de amidon si multa esenta de vanilie)

1-2 linguri de cacao

Mod de preparare blat:

Eu il fac la robot, folosind cutitul de aluat.

1. Amestecam untul (taiat cubulete si rece), faina (cernuta bine), zahar (cernut si el) pana cand avem aspect si consistenta de nisip ud (nu mai mult).

2. Adaugam oul  batut cu putin lapte si amestecam.

3. Adunam firimiturile de aluat si formam o bila (nu lucram mult cu ea, ca sa nu incalzim si topim untul, pentru ca aluatul va deveni dur).

4. Aplatizam, invelim in folie si lasam la rece  30 min,

5. Apoi punem intr-o forma unsa de 24 cm.

Mod de preparare crema de branza

Incalzim cuptorul la 180° C

1. Amestecam untul cu zaharul, ouale unul cate unul, branza de vaci (atentie sa fie una cremoasa) si praful de budinca.

2. Separam o treime din cantitate si amestecam cu cacao.

3. Cu ajutorul unui polonic vom turna crema pe blat: 2 polonice de crema gabena, un polonic de crema cu cacao, si repetam pana la final. Se toarna cu polonicul fix in mijlocul tavii, crema se va intinde singura, sub propria greutate.

4. Se coace la 180 de grade appx. o ora, pana cand o scobitoare infipta in mijloc iese curata.

Zebra Cheesecake, in English

I’m not too crazy about cheesecake, so today’s post will be one of the few based on cheese … but worth it, both visually and taste-wise🙂

Crust dough ingredients:

125 g butter

250 g white flour

50 g powdered sugar

1 egg

a splash of milk

Cheesecake ingredients:

125 g butter

5 eggs

250 g sugar

750 g cottage cheese / Quark / ricotta  (the more creamy, the tastier cake)

1 pack of vanilla pudding (or 3 tablespoons of corn starch + vanilla essence)

1-2 tablespoons of cocoa

Crust Dough Preparation:

I use the food processor with the pastry knife.

1. Mix butter (cut into cubes and cold), flour (sifted well), sugar (sifted) until we get the  look and consistency of wet sand (not further more).

2. Add the egg beaten with a little milk and mix a little further (until small pellets are formed).

3. Gather the scraps of dough and form a ball (do not work much with it, as your hands will heat and melt the butter, and the dough will become hard).

4. Flatten, wrap in foil and leave to cool in the refrigerator for 30 minutes,

5. Then put in a greased 24 cm springform.

Cheesecake Preparation

Preheat oven to 180 ° C

1. Mix butter, sugar, eggs one by one, cheese (if it is not creamy, mix it first) and pudding powder.

2. Separate the quantity by one third/ two thirds and mix cocoa in the smaller part.

3. Using a ladle we pour the cheese cream over the dough: 2 ladles of yellow cream followed by a ladle of cocoa cream , and repeat until the end. Pour the cream right into the middle of the pan, one ladle after the other, and it will “stretch” under its own weight.

4. Bake at 180 degrees, for appx. an hour, until a toothpick stuck in the center comes out clean.
