prajitura cu mere si bezea (also in English)

praji cu mere si bezea (28)

For English please scroll down

3. Se adauga faina incet, cate o lingura. In prima lingura se amesteca si praful de copt. Se adauga faina pana cand amestecul este gros dar fluid si cade in valuri, ca de chec (se vede cum trebuie sa curga in poza).

Layered cake with apple and meringue

Apple season is coming, and I got a whole bag of apples coming back from our holiday house.

There are two apple cakes I like very much. One is already here on the blog, the American apple pie and the other is, obviously, made with meringue.

Ingredients:

Apple filling:

1500 g finely grated apples,  cooked with 5 tablespoons of sugar and a teaspoon of cinnamon

Cake:

5 egg yolks + 1 whole egg

250 g caster sugar

sunflower oil 180ml

125ml hot water

15 g yeast

Baking powder 10g (one sachet)

15 to 20 tablespoons of flour (make it 20, to be sure)

Meringue

5 egg whites

5 tablespoons sugar

1. Cook the apples with sugar and cinnamon and if you like, with a handful of coarse ground nuts.

2. Beat the 5 egg yolks and the whole egg with 250 grams of sugar, until the sugar melts completely. Slowly add the oil, and then hot water, mixing well. When the mixture is still warm (not hot) add the yeast and allow 10 minutes to activate.

3. Add the flour slowly, one tablespoon at a time. In the first tablespoon mix the baking powder. Add flour until mixture is thick but fluid and heavy (see picture for fluidity).

4. Pour mixture into cake pan ( appx. 24/35cm) lined with baking sheet. Cook for 15 minutes in preheated oven at 180 degrees C. After 15 minutes remove from oven and spread the apple mixture on top.

5. Bake at 180 degrees for 20 minutes. After 20 minutes remove and cover with meringue (made from the 5 egg whites beaten with remaining 5 tablespoons of sugar). You can make small grooves in the meringue using a fork. Bake it in the oven for 10 more minutes, until meringue turns golden.

Foarte gustoasa prajitura, am facut-o ieri si toata lumea a apreciat-o.
