Un desert delicios, nepretentios, absolut delicios cu o cupa de inghetata de vanilie. Este de fapt delicioasa mea placinta cu mere, intr-o alta interpretare (mai light).

Aluat de tarta:

155 g de faina (1 si 1/4 cups)

115 g unt

1/4 lingurita de sare

60 ml apa foarte rece

 

Umplutura de mere:

600g de mere taiate cubulete sau rase

100 g zahar brun

2 linguri de faina

1,5 lingurite scortisoara

100 grame de nuci prajite si maruntite

 

4 forme de tarta de appx. 12 cm diametru

 

Metoda prepararii aluatului de tarta:

1. Secretul acestui aluat este ca toate ingredientele trebuie sa fie foarte reci: untul direct din frigider (taiat cubulete), apa sa aiba ace de gheata in ea si faina trebuie si ea tinuta la frigider 15 min

2. Eu folosesc robotul, cu cutitul de aluat. Amestec faina si untul si sarea cu cateva pulse-uri, pana cand amestecul are aspect de nisip ud iar bucatile de unt nu sunt complet omogenizate. Apoi, fara sa mai folosesc robotul, adaug cate putina apa pana cand aluatul se leaga si are aspect de pelete (nu trebuie folosita toata apa daca nu e necesar). mai multe poze aici.

3. Se formeaza o bila de aluat si se da la frigider 30-120 de minute

 

Metoda prepararii placintei

1. Pentru umplutura se pun pe foc merele cu zaharul, 10-15 minute, pana cand scade sucul merelor

2. Se ia compozitia de pe foc si se adauga faina, scortisoara si nucile.

3. Se imparte umplutura in mod egal intre cele 4 forme (dupa cum se vede, am facut placinta si cu merele rase, si cu merele taiate cubulete).

4. Se scoate aluatul din frigider, se intinde in foaie cu grosimea de 0,5 cm si se taie benzi, de latimea pe care o doriti.

5. Se aseaza benzile sub forma de grilaj peste forma de tarta (daca faceti cantitate dubla de aluat le puteti impleti mai frumos – poza din stanga). Se ung cu galbenus de ou

6. Se dau la cuptor, 200 grade celsius, 30-35 min, pana cand aluatul se rumeneste frumos. Cu 5 minute inainte de a fi gata, se presara deasupra niste zahar brun.

Mini apple pie – English recipe

A delicious dessert, unpretentious, absolutely delicious with a cup of vanilla ice cream. It’s actually my delicious apple pie, in another interpretation (lighter).

Flaky crust dough:

155 g flour (1 and 1/4 cups)

115 g butter

1/4 teaspoon salt

60 ml ice-cold water

Apple Filling:

600g diced or grated apple

100 g brown sugar

2 tablespoons flour

1.5 teaspoons cinnamon

100 grams of walnuts toasted and chopped

Four individual pie dishes, appx. 12 cm diameter

Flaky crust preparation method:

1. The secret to this dough is that all ingredients should be very cold: butter straight from the fridge (diced), water ice cold and flour must also be kept in the refrigerator for 15 min

2. I use the food processor with the dough implement. I mix flour, butter and salt push pulse a few times, until the mixture has the appearance of wet sand and the pieces of butter are not completely homogenized. Then, I no longer use the food processor, just add a little water and mix with a fork until the dough gets the appearance of pellets (do not use all water if not necessary). More pictures here.

3. Form a ball of dough, wrap in film and put it in the fridge for 30-120 minutes

Pie preparation method

1. Mix apples with sugar, over heat for 10 to 15 minutes, until most apples juice evaporates.

2. Take apple mixture off the heat and add the flour, cinnamon and nuts.

3. Divide the filling evenly between the four shells (as you can see, I made this pie with grated apples, and with chopped apples as well).

4. Remove the dough from the refrigerator, roll out a sheet of 0.5 cm and cut strips, of whichever width you desire.

5. Place the strips in the form of grid over the filled pie shells shell (If you double the quantity of the dough, you will get a far nicer braid – see the picture on the left). Brush with egg wash.

6. Bake at 200 degrees Celsius, for 30-35 minutes, until the crust is nicely browned. About 5 minutes before it is ready, sprinkle some brown sugar on top.
