Prajitura desteapta, cu ciocolata (also in English)

Intelligent cake – English recipe

ok … who did not hear of the smart cake, raise your hand? … A cake which is made from a single batter and then separates itself in the oven in three layers?

I tried the chocolate version, although classically it is a vanilla cake.

I only had 6 eggs, so I modified the 8 eggs recipe (but in my tray of 30/20 cm I think it would workvery well with eight eggs, I would get a taller cake).

Ingredients:

6 eggs / 8 eggs

750ml / 1 liter milk

200g sugar / 280 g

170 g flour / 230 g

180 g butter / 250 g

150 g dark chocolate / 200g

Method:

1. Begin by melting the butter with the chocolate in a bowl on heat (the mixture should then be allowed to cool)

2. Separate the eggs and beat the egg whites stiff with half the sugar and the egg yolks with the remaining sugar, until doubled in volume and whitened .

3. Stir butter and chocolate in the yolks mixture, then add  the flour, stirring until a smooth dough forms.

4. Pour the warm milk slowly and mix.

5. Add the egg whites to the liquid composition, mixing gently. The result is a very liquid batter with “lumps” of egg whites, as in the picture – do not worry, it should be this way.

6. Pour into a pan of 30/20 cm, lined with baking paper

7. Bake 10 minutes at 180 degrees, then lower the heat to 160 degrees and bake for another 50 minutes. Allow to cool in the oven and then put it in the fridge for another 2-3 hours. It is delicious the next day🙂
