Chec cu scortisoara si glazura alba (also in English)

… demult nu am mai fost atat de entuziasmata de o reteta ca de aceasta pe care urmeaza sa o scriu aici… o prajitura senzationala, parfumata si  atat de frageda ca se topeste in gura. Literalmente🙂. Inspirata de rulorile cu scortisoara (precum reteta de aici)

I-am facut si o glazura, pentru ca asa era reteta. Desi glazura este delicioasa (si cred ca ar merge super ca si crema pentru un tort – eventual tortul de banane), nu e ca ii trebuie chec-ului astuia. E atat de bun de unul singur, iar glazura un pic cam dulce, incat nu le-as mai amesteca data viitoare.

Pai, sa-i dau drumul…

Ingrediente (pentru 2 tavi de chec):

230 g unt

600 g zahar + 60 de g separat

250 g iaurt grecesc (eu am folosit 280g)

3 linguri de lapte (reteta cerea frisca lichida, dar mi s-a parut prea mult si asa)

6 oua

350 de grame faina

1/2 lingurita bicarbonat

1 lingura scorisoara

 

Glazura

30 g unt

50 g crema de branza

50 ml smantana pentru frisca

180 g zahar pudra

 

Metoda

1. se mixeaza untul (moale) cu zaharul (600 g)

2. se adauga pe rand iaurtul, laptele, ouale (unul cate unul) si se mixeaza bine dupa fiecare

3. separat se amesteca faina cu bicarbonatul, si apoi se  cerne, in trei etape, n amestecul lichid. Rezulta un aluat care curge in valuri, tipic pentru chec.

4. se amesteca cele 60 g de zahar ramase cu scortisoara

5. se toarna 1/3 din aluat in 2 tavi de chec tapetate cu hartie. se presara pe deasupra zahar amestecat cu scortisoara. Se acopera cu alta treime din aluat, si se presara restul de scortisoara. La final se acopera cu restul de aluat.

6. se coace la 180 de grade, timp de 50 de minute (testul scobitorii). se lasa sa se raceasca complet.

7. pentru glazura, se amesteca toate ingredientele pana cand avem o crema pufoasa. Glazura se toarna peste checurile reci si se mai da la frigider cel putin inca o ora.

Cinnamon roll pound cake (recipe in English)

I have not been so excited about a recipe in a while… a sensational cake, scented with cinnamon and so tender that it melts in your mouth. Literally🙂. Inspired by cinnamon rolls (my recipe here)

I made a glaze, because this is how the recipe was. While the glaze is delicious (and I think would be great  for a layer cake – this banana cake eventually), it is not what this cake needs. It’s so good by itself, that I would not mix them next time. Well, let’s   go …

Ingredients (for 2 loaf pans)

Butter 230 g

Sugar 600 g + 60 g divided

250 g Greek yogurt (I used 280g)

3 tablespoons milk (the recipe called for heavy cream, but I preffered milk)

6 eggs

350 grams flour

1/2 teaspoon baking soda

1 tablespoon cinnamon

Glaze

30 g butter

50 g cream cheese

50 ml heavy cream

180 g powdered sugar

Method

1. Mix butter (at room temp) with the sugar (600 g)

2. In turns add the yogurt, milk, eggs (one by one) and mix well after each

3. Separately, mix the flour with baking soda, then sift in three stages in the liquid mixture. The result is a liquid batter, but with a certain weight, creating waves when it falls off the paddle.

4. Mix the remaining 60 g sugar with cinnamon

5. Pour 1/3 of the batter into two loaf pans lined with paper. Sprinkle over the sugar mixed with cinnamon. Cover with another third of the batter and sprinkle the remaining cinnamon. Lat layer is of batter.

6. Bake at 180 degrees for 50 minutes (toothpick test). Let cool completely.

7. For the glaze, mix all the ingredients until you have a fluffy cream. The glaze is poured over the cooled cakes and the cake is refrigerated for at least another hour
