Lavender-lemon cubes, recipe in English

And here’s the second festive recipe at the end of 2014 .

As the story goes, I had bought some culinary lavender a year ago (or 2 years ago?) .

I had used it only once, for some lavender flan – which was pretty disappointing . As it was about to expire, I thought to give it one last chance. I had recently saved this recipe for lemon with lavender cubes. And I am so glad I did – that proved to be a superb recipe, with a refined flavor, from the lavender – so here , I still have reasons to keep ordering this unusual ingredient , now that I know what to use it in.🙂

Ingredients:

Crust :

240g butter, melted and cooled

Sugar 100 g

2 teaspoons vanilla extract

250g flour

1/2 teaspoon salt

Lemon filling :

8 large eggs

300ml lemon juice ( appx . 4 large lemons – I used 3 lemons and half of an orange )

560 g sugar mixed with 2 tablespoons of culinary lavender

zest of 2 lemons

65 g flour

powdered sugar for dusting

Method:

1. For the crust , mix the butter with the sugar, vanilla and salt, and finally add the flour. It will result in a very wet dough (actually a very greasy dough, as seen in the photo)

2. Press in a thin layer (using the fingers ) in a pan of 20/30 cm.

3. Bake at 180C , for 25 to 30 minutes, until golden  on top.

4. Beat the eggs with the flavored sugar, then add the remaining ingredients, flour at the end.

5. When the crust is baked (and hot) , pour lemon filling over it and put it back in the oven for 25-30 minutes , reducing the temperature to 165C . The cake is done when it is a little jiggly only in the middle

6.Cut when completely cooled, ideally using a heated knife blade.
